Greek Lemon Chicken with Potatoes
Ingredients:
- 4 chicken thighs
- 4 large potatoes, peeled and cut into wedges
- 4 cloves garlic, minced
- 1/4 cup olive oil
- Juice of 2 lemons
- 1 tablespoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Marinade: In a large bowl, mix the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Marinate the Chicken: Add the chicken thighs to the bowl and coat them well with the marinade. Let them sit for at least 30 minutes to absorb the flavors.
- Prepare the Potatoes: Place the potato wedges in a baking dish. Drizzle some olive oil, salt, and pepper over them, and toss to coat evenly.
- Combine and Bake: Place the marinated chicken thighs on top of the potatoes in the baking dish. Pour any remaining marinade over the top.
- Bake: Bake in the preheated oven for about 45-50 minutes, or until the chicken is cooked through and the potatoes are golden and tender.
- Garnish and Serve: Garnish with fresh parsley and serve hot.
